Recipe: ‘Hawaiian’ Breakfast Eggs

This is a quick recipe to get you started in the morning. All you need is 5 minutes and a few ingredients to get the energy you need. Feel free to add/switch ingredients as you please, let me know what you do!

Ingredients (1):

  • 4 pasture-fed organic eggs (happy chickens, make happy eggs and happy people)
  • 1/2 cup chopped, fresh pineapple
  • cheddar, or any hard cheese to your liking
  • chopped parsley
  • drizzle of EVOO
  • salt + pepper to taste
  • toast (spelt, white, sprouted, whole grain, whatever you want!)

Prep your ingredients: Chop the pineapple and cheese into small pieces. Chop the parsley finely and set aside. Have some bread toasting for when the eggs are ready.

*Do not use canned pineapple*, it’s devoid of enzymes and nutrients, eat it if all you want is a lot of sugar and a bit of fiber.

Raw pineapple is a great source of manganese and vitamin c, and is delicious!

Please make sure your eggs are organic and/or pasture raised, and do not overcook them! Cooking the eggs gently, better preserves the nutrient content, and the better your body absorbs all the ‘good stuff’.

In a bit of EVOO or your choice of fat, scramble the eggs gently over medium heat. Mix in the pineapple and cheese, crack some pepper and sprinkle some salt. Top your delicious piece of toast with some butter, or even some jam (the salty cheese and jam dance in your mouth, it’s delicious).
