Recipe: Breakfast Frittata

We have been told time and time again that breakfast is the most important meal of the day. It gives us the energy to get by those first tiresome hours, but somehow we find it so difficult to make the time to have a complete meal. Here is a quick recipe full of protein and healthy fats to get your day started!

This frittata is quick to make and extremely flavorful. Use your favourite ingredients, swap whatever you please and enjoy with some whole grain toast, avocado or fruit on the side. It takes about 10 minutes to cook and possibly another 3 minutes to get the ingredients ready, great to make when you those 15 minutes on hand.

Ingredients (serves 1):

  • 4 large organic free range eggs
  • a few slices or Genoa salami or any charcuterie you have on hand
  • 2 shiitake mushrooms, or any other veggies you want
  • any open cheeses (cheddar, gouda, or Gruyère work great)
  • 4 cherry tomatoes
  • finely chopped parsley

Place the tomatoes, mushrooms, and salami in a non-stick frying pan and sauté on medium heat until cooked through

Separate the tomatoes and carefully add the 4 eggs in the frying pan. Cook over medium heat until the whites have coagulated and the yolks are still runny.

Plate with half a sliced avocado, the tomatoes and there you have it! A delicious, quick, and well-balanced meal!. Enjoy with some fresh fruit juice and some buttered toast : P

  1. Delicious! I’m a rushing college student, so my alarm goes off a little too early to ditch my bagel or oatmeal breakfast. This is definitely a lunch for me though! Thanks for sharing.

    • I definitely understand. When I am in a rush I grab a bag of raw nuts and a protein bar!

      For lunch it’d be delicious too : P!
