Recipe : Crispy Salmon with Minty Mashed Potatoes

Salmon is delicious no matter how you cook it, but my favorite way to eat it is definitely grilled. As satisfying as a good steak and packed with Omega-3’s, this dish is as delicious as it is healthy.

Ingredients (Serves 4):

  • 3 wild-caught salmon filets
  • 1/2 lemon
  • 1 cup organic walnuts
  • 1 cup organic basil
  • 1 1/2 pounds of yukon gold potatoes
  • 1 1/2 cups of organic mint (finely chopped)
  • 5-6 cloves of garlic
  • 1 1/2 cups of organic peas
  • sea salt
  • black pepper
  • Extra Virgin Olive Oil

Mint and peas make an awesome combination. Both refreshing and satisfying, together they offer depth and contribute to any Spring or Summer Dish.

Minty-Peas Mashed Potatoes

  1. Peel the potatoes and place in a pot filled with cold salted water
  2. Bring the water to a steady boil and cook potatoes (about 6-10 minutes depending on potatoes used)
  3. Add peas 6 minutes in
  4. Once a knife easily goes through the potatoes, they are ready. Remove the water
  5. Pour around 2 tbsp of olive oil in and add salt and pepper to taste
  6. Mash the potatoes and peas until desired texture (I prefer mine to have small pieces of potatoes for a bite)
  7. Add the mint (finely chopped) and mix in

Salmon with Walnut Pesto

-First prepare the pesto.

  1. Toast the walnuts on medium heat and peel skins off, leave to cool
  2. In a food processor, combine the basil, lemon juice, walnuts, 3s tbsp of olive oil, salt and pepper and blend until all ingredients are combined

-Next prep the salmon for grilling

  1. Score the skin side of the salmon with a very sharp knife. The closer the scores, the crispier the salmon
  2. Fill the scores with the pesto and coarse sea salt. (You can always leave the salmon plain, or add your own herbs!)
  3. Put the salmon skin side down on a hot pan, flip once only!
  4. You can leave the salmon resting skin side down on the pan if necessary, but never meat-side down, it will dry out.
